It's an absolute crime that Frankie is selling it for this low of a price. Firstly, due to the fat content, one piece will last me for two to three days and keep me satiated. Secondly, dollar for dollar, the flavor blows everything else I've ever eaten out of the water, both in and out of restaurants. The fat is a mix of buttery and silky with the mineral taste of pastured pork. The meat is simultaneously chewy and tender.
I cooked this to 140 F, held it there for a while, and seared it at 450 F for thirty seconds. Even that was too much cooking, in my opinion. No more than a fifteen-second sear is needed for a cut this thin.
Frankie's Iberico secreto was an amazing piece of meat. Extremely juicy, good amount of fat, crazy flavor, and an affordable price. I'll be ordering again.

I grilled one of these over live fire coals the other day, and it was off-the-charts awesome. Sooooooo much juicy, fatty, tender deliciousness. After Iberico, all other pork is just meh.
