In fact, I would move to Spain and have a herd of free range humans munching on Spanish grass and acorns to ensure an ever ready supply. Note to chefs: please go low and slow when cooking. Do not go higher than 220° at any time. Given their quality, do not over season either… You want the natural profile of these ribs to shine through.
