Pasture Raised Iberico Pork St. Louis Spare Ribs (Pata Negra)
Just a pinch of salt - tasted great!
Put on some of Frank's salt of the Bolivian mountain salt, and waygu tallow, grilled on the BBQ, the spare ribs come out tender and juicy from tallow fat and salt. It tasted exactly as regular beef ribs. My mind was blown from the first bitten. I couldn't keep myself from eating.
I haven't tried them, the weather has not been conducive to grilling.
From the deep color of the meat to the rich and unique hint of acorn in every bite-The qualities of this heritage pork are a wonderful addition to world of smoked ribs. Simply exquisite!!!
