Pasture Raised Iberico Pork St. Louis Spare Ribs
I buy these and baby backs ribs for our July 4th Rib Fest. (Plus a few extra to have throughout the year) Smoking with apple, cherry and oak chips make these ribs the best! No rub needed. Seriously.
Forgot I had these in my freezer for 10 months and I recently cooked up in oven 225 degrees until bones pull off easily.

I grilled these over live fire coals with just salt & pepper and they tasted fantastic, like other Iberico pork I’ve purchased from Frankie’s. They were trimmed too close to the bone, however, and there was hardly any meat on them at all except at one end of each bone and the tiny bit between bones. I normally eat about 4 ribs from a normal rack of spare ribs; I ate almost a whole rack of these by myself.
I just love the free-range steaks and cheeses Frank offers. I consistently purchase them, and I am never disappointed.
