Grass Fed Beef Tendons
Now that the cold weather is here, skip the bone broth & make yourself some beef tendon soup! These tendons are the perfect size, just pop them in your crock pot, add a chopped onion, salt & whatever seasonings you like. (I use 2 Tbsp. of Thai red curry paste & some soy sauce.) Fill the pot with water & cover it, set the temp to Low & the timer for 12 hrs. When they're done, you'll have a potful of rich, delicious collagen-filled goodness. You may need take your kitchen scissors & cut some of the chunks into smaller pieces, but that's it. Get your ladle, transfer the soup into smaller containers for easy storage, freeze most of them but keep 1 in the fridge. When the soup cools, it will be as thick as ballistic gel, firm enough to slice with a knife. THAT is the sign of high-quality collagen.
