All of our beef is 100% Grass Fed and Grass finished raised on Pasture year round.

Upper leg bone marrow is firmer and richer.

Lower leg marrow is softer, creamier, and more gelatinous.

Why Free Range?

The nutrition of our food depends on how it was grown, especially animal products. These vitamins, minerals, and fatty acids are stored in the protein and fat, determining both taste and nutrient content. Feedlot animals are not only missing the quality diet that make their meat taste good, they can have “off” flavors, a lower nutrient content, and an imbalanced fatty acid ratio. We strive to procure quality animal products that are both enjoyable and nutritious, as it should be.

Uses

Fat can be seared in a pan or on the grill, or even made into your own tallow. Both make a delicious accompaniment to your steak. Tallow is an excellent cooking fat that can replace anything you typically use.

    Have only tried the tibia raw (loved when could buy it separately). Golden delicious creaminess. So satiating I could probably last a day on half a canoe. Leave on counter for room temperature. Dog loves chewing the raw bone. Calm fat bliss.

    It is impossible to find and buy canoe-cut marrow bones here locally, so normally I make do with cross-cut bones from local ranchers. As such, these are a fantastic treat, they roast up nicely, and the fat/drippings which roasts off into the pan is divine. I could eat these every day!

    I roasted the bones on the grill and topped my steak with the marrow. This is my first time having bone marrow and it tastes a lot different than beef fat. It tastes just like butter, rich and delicious. Value wise the beef fat might be the better way to go, but this is a special treat!

    Ok, I never had bone marrow before but I had this sudden urge to get it. I got the sampler pack (great idea BTW) and tried them for dinner the next day. Delicious and buttery, I ate them with roasted garlic and saved the tallow left over in the dish. I ordered more and can’t wait to get them! I want to enjoy this everyday!

Incredibly diverse as well, can be ate on its own which i do usually. but have begun adding the marrow to my smoothies in the mornings along with franks liver detox (on organ supplements) with egg yolks and raw honey.
