Colatura di Alici is a refined and appetizing condiment that dates back to the ancient Romans who called it “Garum.” Colatura is obtained from the process of brining the anchovies, whereby each drop is collected and filtered numerous times to obtain a fragrant liquid. It is amber in color with rich aromas of the sea. It’s a healthy condiment that is easy to digest, best drizzled over pasta, salads or vegetables.
Why Fish Sauce?
Garum is a healthy condiment that is easy to digest, When mixed with wine (oenogarum, a popular Byzantine sauce), vinegar, black pepper, or oil, garum enhances the flavor of a wide variety of dishes, including boiled veal and steamed mussels. Diluted with water it was distributed to Roman legions.

Brought this as a curiosity but after one bottle am hooked. I use it in small amounts in almost everything, can’t always notice the taste. Yet most everything and it seems to be tastier. really like this

I avoid sauce with sugar or oil, which leaves little else to perk up the blandness of meat. I put mustard and this sauce on the ground beef, and the flavor comes alive. The mustard is spicey and the fish sauce is salty, but in a flavorful way. I will make it a condiment staple from now on.
