Grass Fed Beef Belly
I’ve ordered only twice and will keep on ordering. Everything comes fresh and well packed. My favorite is beef belly!
I tried a few ways to cook them. For me the best way was to bake at 325-350 untill they were crispy on the outside and a little more than medium rare. Pink but not bloody. Soon I want to try on my smoker to add more flavor. I really like your products Frank, please don't take early retirement. LOL

I have been searching for beef bacon in my area for quite a while to no avail. Enter: 9 lbs of Frankie's Free Range Meats beef bacon from the Netherlands. Personally, I don't care about the outsourcing as long as it is quality beef. After thawing the slab, I cut it into five sections and froze four, trying my hand at curing the fifth to make beef bacon. At various steps along the way I did taste tests by sautéing small samples and noticed from the beginning a consistent strange but not bad flavor. I was initially concerned that I had mistreated the meat, but never had symptoms of illness so I continued. By the end of the process I had grown accustomed to this fascinating flavor that eventually brought back memories of a wild caught deer I was fortunate enough to try about 25 years ago. I suppose it would be considered a "gamey" flavor as this is commonly associated with wild-caught game, which suggests to me that Frankie’s Free Range source is truly not keeping their animals cooped up in the stall of a farm but rather leaving the animals very “Free” to run around. This definitely was not the flavor of beef bacon I had tried previously. If I could get feedback about this intriguing flavor from Frankie himself or a representative, I would love to know more. Thanks for helping to make a really fun experience that much more exciting with this tasty beef.
