Leaner than grocery store duck but still has enough fat for a good duck recipe. One reviewer complained about feathers...we roasted it as-is and couldn't taste or feel any feather material in the meat. A tougher meat than in used to for poultry but that makes it so fun to eat. The flavor and texture make this a great experience.
I had to pluck this duck for to days to make it edible.
Purchase 2 lamb heads to make demi glace with, 2 ducks and some cheese. Service and shipment speed were great. Duck and lamb were good but I do wish the lamb heads would have split so they were easier to deal with.
Overall good experience and will be back for more from Frankie's.
Tasted really good but it was a very small bird. Would order again and hope for a bigger bird.
Lovely duck! Roasted it in balsamic glaze, stuffed with wild boar bacon, garlic, and onions - then brazed potatoes and other mixed viggoes in the drippings and some stock. Omg. YUM.
