Incredible flavor and tenderness. I salted this the day before after also scoring the fat cap which I typically discard on a strip steak because it still tends to be chewy. Grilled as a I do most steaks with just simple pepper added prior to grilling. Seared the fat cap a bit first then simple grilling. Absolutely worth every penny. Couldn't eat the entire 1 lb. steak but then had as good of a steak sandwich the next day with leftovers that you could ever hope to have.

I'll admit I was a little worried with a first order from a new company, especially when it took longer than I expected to ship. But the order arrived in perfect condition... nothing inside was above -7 F, and there was plenty of dry ice left.
I have not had the chance to try the Wagyu NY strip yet,, but I did make the tenderloin, which came out perfect. I cooked it Sous Vide to 135 F then seared it in cast iron, and it was the most perfect medium rare steak I have ever made. Was a little worried that it might be tough since it was grass fed and not USDA prime, but it was the tenderest, best steak I have ever made. Looking forward to trying the Wagyo next, and plan to do it on my Yakitori grill. Also impressed with the amount of kidneys... based on the website photos I expected a lot less, but I have enough kidneys to satisfy even my love of steak and kidney pie.
