Great tasting me meat.

Ground organ meat is very good mixed with 80/20 beef/pork

Worst quality meat

I normally buy grass fed beef hearts locally. So maybe I’m spoiled. My local supplier ran out so I tried Free Range Meat beef hearts. They are only sold in 1 lb packages. So I bought 10 lbs, minimum order, of their beef hearts. There was not one package that contained a solid piece of beef heart. It is usually 2 or 3 pieces of the heart trimmings with huge chunks of fat on it. When I normally buy grass fed hearts locally I get the whole heart and there is barely any fat on it. Free Range Meats beef hearts have more fat than heart meat. I was very disappointed to say the least. I’ve emailed my concerns earlier with no reply. I guess return customers aren’t sought after at Free Range Meats.

I’ve been incorporating grass finished heart(and liver) into my burger mix for quite a while from several different suppliers. Yours is trimmed out the best but there’s always some visceral fat remaining which I never trim.
