The finest grade is called jamón ibérico de bellota (acorn). This ham is from free-range pigs that roam oak forests (called dehesas) along the border between Spain and Portugal and eat only acorns during this last period. The exercise and diet have a significant effect on the flavor of the meat; the ham is cured for 36 months. This grade is divided into:
The next grade is Green label – jamón ibérico cebo de campo. This ham is from pigs that are pastured and fed a combination of acorns and grain. It can be either 100%, 75% or 50% pure ibérico pig breed.

No exaggeration, this was crazy luxurious. I couldn’t stop vacuuming the slices down like a wild beast, and my elderly Ma and Dad totally loved it too. This stuff is straight luxury and as clean as it gets. The price is understandable because so much goes into the raising of this superb meat. Wish I could vacuum these daily

I have never ever had a prosciutto that tasted as good as this one, and I’ve tried many. I’ve heard of the nuttiness of Iberico pork before, but the intensity of the flavor was something I really didn’t anticipate. Words really don’t describe. Definitely buying again!
