    Everything I ordered from Frankie’s free range meats has been incredible. The fat has a beautiful yellow tinge and tastes amazing. I was worried about the quality of the trimmings but they were all fat. I’m thoroughly happy with my purchase, but will make one recommendation for area of improvement – shipping. I received the products partially thawed and in a box semi-destroyed box. Granted, it was also ridiculously hot during the shipment days. Also, shipment took a while, but Frankie was attentive to my emails and inquiries. All in all, I am satisfied and will order again. I wouldn’t mind paying extra too for better shipping procedures.

    Mine didn’t have the great flavor described. It had flavor that reminded of a fishy smell? I’ll try again as maybe it was off but if it tastes like this on a regular basis I won’t buy it because I’m not allergic to eggs.

    I had never tried brain before, and it was some of the most delicious food I’ve eaten. Just seared it lightly so I could taste it mostly raw. It was just like Frank described in his videos—a mild eggy taste with almost a marshmallow consistency. I see now why this is a delicacy in many cultures.     For my first time trying this out I ate it raw since I was unsure on how to cook it. Surprisingly, this has kind of a gelatin-like texture which was pleasant. Taste-wise it’s very mild and it’s hard to compare the taste to anything, but overall it’s good because it seems like a food that would be good to ease into. It’s a bit expensive at $18 for what looks to me to be a pound or so of food, but I’ve paid as much or more for steaks, so that’s not so bad. Try it out if you’re curious.

    Excellent quality brains. Scramble with eggs and they are darn good. You can also fry them in tallow till they lose some moisture and then they take on a soft tofu texture. I ate a bunch raw and they taste good but the texture was a little weird to me. Will order again for sure and conduct some more experiments. I would recommend them. Between the brains and milkfed veal liver everyone needs to place an order with Frankie’s.

    Stuff was great, has that egg yolk texture thats very rich and creamy, and has a very, very mild beef flavor, making it approachable as long as you get over the fact that its a brain. Only complaint was that I only got 3/4 lb of brain, but I can’t blame them since the size of the brains obviously vary. Highly recommend.

    I have been cooking calves or veal brains for a long time. The package I received from Frankie’s was the top of the line product. Try making this simple recipe and if the audience is not aware of the contents they will love it. Par boil with some vinegar for 20 minutes. Chop raw onions and hard boiled egg. Season with salt and pepper. Mash the brains and fold in the onions and egg. Add a little oil so the mixture has a consistency thicker than Mayo.. Spread on rye bread.

    I eat these raw. No issues. I did find a small black spot on the brain that I cut off. It appeared to only be superficial. Other than that the brain felt firm (for brain). Veal is typically slaughtered between 16-18 weeks which makes them safe from Mad Cow/BSE which develops after about 30 months of age. Therefor, the black spot was probably fine but why eat presumably dead cells they serve no purpose.

    The expiration date will not matter if it’s frozen. Use your senses, eyes and nose and then taste to determine if there is an issue. Frankies products have always had my back with replacement/returns if needed just be a kind human and have respect. Some of you are animals over keyboards.

    Texture
    – A soft firmness. Like a soft but not warm butter

    Mouth Feel
    – Fatty but doesn’t stick to your mouth like bone marrow or butter it’s more gentle.

    Taste
    – Not much really, it’s honestly all mouth feel. It will taste almost just as it smells which is very, very mild. Tastes pink, if that makes sense. A very soft, gentle color and taste alike.

    How to eat
    – Raw, cut into bit sized pieces think chicken nuggets. No salt was needed the taste is enjoyable. You can add honey or maybe a quality maple syrup/agave. I eat all my organs in 2-3oz servings and always raw. Brain is best to let it completely thaw. Other organs I eat about 50-70% thaw but brain is enjoyable 100% thawwed and given a couple of minutes (after cutting) outside the fridge. Not room temp but not too cold.

    Tips
    – Use a sharp knife to cut when thawed or cut into chick nugget sized bites while frozen. Cuts extremely easy when frozen but can be difficult when thawed due to the soft texture. Sharp knife/carving knife is no factor.
    – I recommend weighting the entire brain and determining how to cut it given that each portion you each should be 2-3oz. For mine, that was in half. So I thaw the whole half and eat it within the week. Save the other half for 2-3 weeks later. Yours might work best to cut into 3rds.

    The veal brain is delicious! I took it out of the package, sautéed it until it was cooked through (I tried a tiny taste of it raw and it was delish) and if someone gave this to me blindfolded, I would think I was eating delicious creamy scrambled eggs. So good! I ate a third of it yesterday morning, put the remainder in the fridge, and enjoyed another portion this morning for breakfast (only this time I had it with veal liver. Wow! What a fantastic meal!). I didn’t do anything to it other than sauté it and add salt. It was wonderful!

    When I first took a few bites of the brain I felt sudden nausea so I stopped but I felt anxious for an hour. I tried again with only 1 bite the next day and felt good like I just had a little bit of coffee. Gradually my body adjusted and I felt fine eating a bit more.
