Most delicious pork I have ever had ! 💕🤤

I made this for Christmas dinner, and my whole family was blown away by the taste! The mildness, yet deepness of the flavor of the fat. Many people comment that it tastes like beef, and I can see why they would say that, yet this cut does have some distinct pork flavor. If I could afford to eat this for every meal or every day, I would! I pan seared it and then put it in the oven until it reached a medium-rare internal temperature. It was outstanding.

Finally had a chance to try this unique cut of pig and I must say it’s the best pig I ever tasted. I REALLY loved the flavor of the fat and though that was the best part of the animal.

The Most Delicious Pork You'll Ever Have!

I love Jamon Iberico de Bellota, so & I was thrilled at the chance to get a Spanish Iberico pork shoulder to cook myself. And this did not disappoint. Forget about buying "pasture-raised, heritage breed pork" -- it's a rip-off because no matter what breed of pig it is, it's usually still fed corn & crappy grains & soy. This Iberico pork from Spain spends most of it's life in the forest eating acorns & forage. Because of that, the meat is a deeper pink than the pork you see in the supermarket (it looks more like lamb). I sliced the roast into 3 thick steaks, seasoned them well (I used dry jerk seasoning), put them on a rack in the fridge overnight, then sauteed them in a little lard the next day. I cooked them to med. rare (a bit more done than I like my beef) & they were sooo good! Every piece took on a nice crust & inside, it was tender & juicy with a distinctly nutty flavor. I'm waiting for the day when FFRM can offer smoked bacon made from this same Iberico de Bellota pork. Until then, I will definitely be buying this presa cut again!

Try to impress somebody by feeding them a piece of this and have them guess what it is. It really is unlike any pork you’ll ever try; I like how it has a grain similar to beef, and retained a pink center even though I know I cooked it well. The flavor is mild but rich, slightly nutty, vaguely sweet, it’s flavor is more reminiscent to me of wild turkey. No, not the stuff in a bottle haha. Thanks, Frankie 🤗💜
