I thought pastured, heritage breed pork was really upping my pork game but this stuff exceeds it in every way. Beef finally has some competition for my taste buds. Rich and flavorful without heaviness.
My wife hates pork, but she loves this. One piece is more than enough for two people, and its crazy marbling makes for a tender, juicy, and flavorful experience. The flavor is everything people say of Iberico. We simply seared it over a hot charcoal fire with some mild smoke wood and rosemary sprigs. Don’t pass this one up.
