Grass Fed Lamb Liver - 1.5-2 Pounds
This is my first exposure to not only Lamb Liver but also Pastured Raised Liver. If I compare it to Beef or Veal/Calfs Liver please take that into context. That said, I find this to be a perfectly balanced flavor. With Grocery Store Veal/Calfs Liver I like the texture of that better plus it has less "funk" than the Beef. On the downside I find Veal/Calfs Liver to often be too sweet for my tastes, and I would need to aggressively salt it to balance it out. This Lamb Liver on the other hand is absolutely perfect. It has a great texture plus the sweetness but not excessively so. I'm also a big fan of it being sold as one piece (whole?) - The less humans are involved in the processing the better.
Really enjoy the lamb liver and after trying different types of liver this has to be my favorite. Thanks Frank for everything you do
