Perhaps this wasn't a proper wagyu experience. I suspect the magic of wagyu is getting a cut that is already going to be tender from a normal cow. This chuck steak was about as tender as a ribeye straight on the cast iron. Normally I'd need to reverse sear a ribeye at a low temp in the oven before searing to accomplish this tenderness. But that's the thing...I feel like I'd be just as satisfied getting a regular grain fed ribeye. I'm not sold on wagyu...and I sure as shit aint sold on grass fed. Ruminants filter excess omega 6 from bad feed. Conventional grain fed ruminant meat is worlds better than conventional non ruminant meat. Pastured NON ruminants makes a huge difference, but pastured ruminants don't make quite as much of a difference.
I made German-style sauerbraten with the chuck steak and it was heavenly. Perfect steak for roasts and stews!
Pretty good the best I've had from other steaks. Would order this one again.
