Came cut into strips which was nice. There was no unchewable gristle or anything like I usually find on beef fat.
Lamb fat with a few streaks of meat still left on it. I eat it raw since it renders from pan-frying. The flavor is always different, and so far it's reminded me of pure butter, unseasoned white potatoes, and yeast rolls respectively. The bite is like cold butter but with more structure, and grainier texture.
Awesome flavor, nice to switch up the fat on occasion.

Cut in smaller pieces. Rendered it on low for 2-3 min on each side. Very tender and some pieces just melted in my mouth - no chewing needed. Love it.
