Was a bit disappointed when I made the first pound of it, mostly because it was almost impossible for me to chew it, even though it was quite tasty. My mistake was not cutting it thin at all. Just that one little trick made the next batch a breeze to make, without having to go to all the trouble of pan searing for several minutes on each side then sticking it in the oven for several hours like I did with the first batch. A couple of minutes or less on each side on medium to high heat was all that was needed! While it is quite fatty and delicious it’s also a bit pricey and still a bit on the chewy side, but I’ll probably still end up getting more in the future every once in awhile as a treat for myself.
