Very good flavor. The steak had a nice layer of fat, easily the best part.
Thick, well marbled unlike most strips, tender and full of flavor. One of my favorite cuts! This is the best grass fed/finished meat I've had in years. No gamey flavor at all. Rich with no need for flavoring other that a good salt if you're feeling salty. This steak stands on its own.
I was surprised at how tender and juicy the steak was.
Trimmed off the silver skin and grilled on a cast iron pan to medium rare.
One of the best steaks I've had, hands down.
