This grassfed Wagyu fat has a slightly different taste & texture that the usual grassfed beef fat I've gotten from Frankie. This fat is a bit firmer & has a higher melting point, which is great. When you put it a pan to sear a chunk of it on both sides, only about 30% of it melts into liquid fat, whereas half of the regular beef fat melts away. And the taste of the Wagyu fat is excellent! It has that slightly fishy Omega 3 undertone that I look now in high-quality beef fat, but there's a nuttiness to it that I haven't found before. I can't afford the Wagyu beef box, but I'm very happy to buy the fat & cook it with Frankie's regular steaks. If you're a fan of really good beef fat, you'll love this.
