Salted, reverse seared it. then made the fat cap crunchy with some broiling. All done in the oven. Clean up was a breeze. Most likely will be my go-to meal. It was so deliciously different than any other cut I've eaten that I have dreams about it haha

We tried the picanha for the first time last night. Hubby grilled the steaks we cut out of the whole piece to medium-rare. The flavor was outstanding and the soft texture took me by surprise! Yummy! Ordered 5 more!
