Beefy and delicious!

My intention for purchasing beef belly was to make beef bacon. However, I sous vide the beef belly for 24 hours then smoked and grilled it a week later. OMG! Beefy and rich! It was cooked tender enough to break down the connective tissue and fat, but maintained it's shape to slice. The smoke and seasoning complimented the meat very well. I enjoy fatty beef cuts, like brisket, oxtail, and short ribs, especially when they are prepared in such a way that the connective tissue, fat and meat is tender, while the meat maintains its integrity and does not fall apart. Not a fan of shredded or over cooked meat that just falls apart. Interesting, it wasn't too rich. Sometimes super fatty meat can be too rich, to almost nauseating. I wonder if the grass finished nature of the meat makes eating the fat more tolerable, delicious. My grill did flare as much either. I'm sure it would grind well for fatty burgers with nice beefy flavor. I guess I'll have to reorder more beef belly for my bacon project.

While there are other good quality places online I can buy grass-fed, grass-finished meat, (without hormones, antibiotics, etc) there isn't any place I can find that has larger, whole cuts that I can carve up myself to my liking. For instance, everybody else sells steaks that are only 1" thick; I want my cuts of meat closer to 2". Only Frankie sells larger cuts of meat that I can cook whole or cut up the way I like them. Also, I couldn't find anyone else that sells beef belly at all. You'll find Pork belly, but not Beef. Plus Frankie's prices are as good, and often better than the other online farms and resellers of clean meat that I buy from (I've been buying clean meat online for 5 years now, so I'm in a good place to compare). In short, I'm a very happy customer.
