I let one sit under fire for about 3 minutes, then let it sit out of direct heat on the grill while my liver cooked. This sealed in marrow so when I cut it open all the juices came pouring onto my liver. For anyone who hasn't tried this, it will blow you away. The marrow fat added this unbelievably savory flavor. Plus, the smoked hickory and marrow flavor cut that liver flavor so much that this method of cooking is approachable to anyone!
