This was the first time I've ever tried Halloumi cheese, so I have nothing to compare it to, but it was delicious. Tried both sliced cold and lightly fried in ghee. Had a nice "squeakiness" that I enjoy!

First time trying halloumi, and it was out-of-this-world good. Threw this in the cast iron skillet and let it crisp up on each side. Be conservative with it or you’ll eat it all at once.

I have to admit upfront, this cheese from FFRM is more expensive than buying it from Whole Foods, but they don't always have it in stock. I love Halloumi -- it's more dense & not as salty or crumbly as Feta. But the saltiness & firmness of Halloumi make it perfect for making cheese sticks like the ones you order as restaurant appetizers. You can literally cook it on a grill over an open flame & it won't melt! I don't have a proper grill so I had to cook it on my stovetop in a saucepan. I made this grilled Halloumi & watermelon sandwich a few weeks ago (minus the mint leaves). It's not 100% Carnivore but it was totally AWESOME!
